Friday Fun: Baking & Drawing

Here's one of my favorites. It's not only super good and easy, but it looks really gourmet and fancy. It's great to share or serve! The best part for me is that it always reminds me of my neighbor, Deb Campbell, who first shared it with me when our kids were little playmates.

Pumpkin Cake Roll
Preheat oven to 375 degrees.
Beat together the following ingredients with an electric mixer until thoroughly blended:
  • 3 eggs
  • 1 cup sugar
  • 2/3 cup canned pumpkin
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 3/4 cup flour
Pour into a greased jelly roll pan.
Bake 10 minutes or until it tests baked through. Do not overbake.
Take out of oven and turn cake pan over onto a heavy linen towel so the cake falls out. (Or a couple layers of heavy quilted paper towels instead of linen towel).
Then flip it over onto another towel.
Starting with the longer side of the cake, roll the cake along with the towel. Let it cool on a rack.
Unroll when cool. Carefully remove towel. Spread with filling.
  • Filling: beat together 8 oz. softened cream cheese, 2 tablespoons softened butter, 3/4 teaspoon vanilla. Add 1 cup powdered sugar.
Re-roll, and cut in half to make two rolls! One for you, one to share!
Store in freezer. Slice cake while frozen so the filling doesn't ooze out when you cut it. Put each slice on a dessert plate, garnish with a red ripe strawberry or anthing you can imagine. It'll be thawed by the time you pour the coffee and take it to the table.
